It's Two-fer Tuesday

except it's Wednesday.  You read the post about yesterday being terrible, right?  Yeah, so we are just going to pretend it never happened and do Tuesday all over again.  You with me?

I have a weird obsession with fish tacos.  Weird because I have never actually eaten them.  I always want to.  I see them on the menu and really really want to order them.  But then I don't.  Because I am scared they will be gross.  And I will have wasted a good meal.  So now I just obsess over making them.  Except I never have.  I have read about 100 recipes for them.  But they either all have something weird in them (like mango - I like mango, just not cooked) or I am afraid I will screw them up and then they will taste gross.  And I really want them to be good.  I am not great at cooking fish, sorta scared of cooking fish.  I don't know why.   

But this was the week.  I put them on the menu and darn it I was making them.  And you know what?  They turned out great and they were easy!  Here's what you'll need:

Fish Tacos with Black Bean and Corn Dressing
1 lb white fish (I used Tilapia)
 Old Bay Seasoning (or you can make your own mix)
2 tsp Olive Oil
1 Can Black Beans
1 Can Corn
3 Tomatoes, Chopped
1/2 Red Onion, Chopped
Cilantro, chopped, about half a bunch.
Juice from one lime
1 tsp cumin
1 tsp salt
1 tsp pepper
Taco Shells

First, prepare the dressing.  You are going to want this to sit in the fridge for at least an hour to get nice and cold and for the flavors to meld.  Place black beans, corn, tomatoes, onion, lime juice, cumin, salt and pepper in bowl.  Stir together.  Should look like this.  Yum, right?!?  We eat this by itself with chips and it is delicious. 



Heat olive oil in large skill over medium high heat.  Rinse and dry fish.  Season liberally with Old Bay.  Place fish in skillet and blacken on both sides.  About 4 or 5 minutes each side.  Should look like this.  Again, yum!


Break fish up into small pieces with spatula.


Serve on tortilla shells with black bean and corn dressing on top. 


Easy and healthy.  Definitely a dish we will be making again.
